A Quick and Healthy Dinner!

A recipe from the Pingel Household!

I often hear that you don’t “have time” to make a healthy dinner! Here is an easy fix! Use brown rice or cooked quinoa (in a pinch can use the frozen quinoa or brown rice, avail at trader joes/whole foods/sprouts – or can make on stove or rice cooker). Then boil a few inches of water on stove with strainer basket, add handfuls or kale, carrots, cauliflower, broccoli, brussels etc and cover for 3-5 minutes until soft.
Add rice/quinoa and veggies to bowl and top with a dressing of your choice.
Here we have a tahini dressing, which consists of 1/2 cup tahini, 8tsp of tamari (can also use brags amines) and 1/2 cup water. I like to top with some cashews or walnuts. Can also top with tofu, although, when you use kale and cauliflower, it is very hearty! The meal can be made as quick as 10 minutes! Enjoy!
