A quick and easy dinner! I chopped up a peeled sweet potato and slices brussels. Coated in coconut oil and some Garam masala. roast 450 degrees for about 30 min, until soft. Place some greens in bottom of bowl, top with roasted veggies, add some spinach and a dollop of hummus. Top with some salad dressing. The entire meal is ready in less than 45 min. Since it is the oven for the majority of the time…It was enough time for me to help with homework, empty the dishwasher, wipe down the counters and dance in the kitchen with my 3 year old. (you can use any veggies you like in the roasting pan – cauliflower, broccoli, even pears or apples!)
