So my family in general has been eating a grain free diet, which can become a hassle for me as I am vegetarian. So the boys were having zucchini noodles with meat sauce and I needed to adapt that meal to my needs. Here is what i came up with and it was great!
Zucchini Noodles – used a spiralizer to make the noodle and baked in oven for a short while to remove some excess water from the noodle. Patted with papers towels.
I sauteed vegetables from my fridge with coconut oil – mushrooms, green and red peppers, onion, garlic, and Kale
I made a cashew sauce – can google this easily but consists of 1 cup cashews (soaked for 1-2 hours then drained), 1/4 cup cauliflower (steamed), tbsp of nutritional yeast, water to desired consistency and salt and pepper in blender.
Topped the zucchini noodles with sautéed veggies, cashew sauce and walnuts.
Yum! This recipe can be adapted to whatever you have on hand and different spices could be used for sauce. For those not keen on cashew sauce, you could use a tomato sauce too!
