I was given this recipe by my dear husband, who found it somewhere on social media. A bit skeptical, I dove in to try it and see if it was worth the hype. After multiple frying pans with stuck on pancake batter and nothing that resembled a pancake, I finally found a solution to make these things work! I kept the heat low, around 3, and when I poured the batter into the pan, I covered it with a lid. This way, it cooked more thoroughly and I was able to flip it (carefully mind you) to produce an amazing little pancake! The Kids loved it too!
Ingredients for batter:
1 mashed banana, 2 eggs, Tbsp of cinnamon. You can mix by hand, but I used the handy vitamix blender to incorporate. Flip away!
